Award Winning Salsa

Well…it won an award in my family 🤣 This blog has seen MANY salsa recipes. I LOVE salsa. I’m always trying to perfect my recipe so I tried some different things yesterday and BAM….I mean wowza BAM!!!! Jayme’s Award Winning 😉 Salsa 2lbs Tomatillo, husked and washed and halved 2 Jalapeño, washed, halved, seeded if you’re a wuss.  1 Serrano, washed, remove stem 1 red onion, quartered 1 Lg Tomato 1 Bunch Cilantro 2 Tbs minced garlic  Salt  On a large baking sheet lay out your tomatillos, peppers and onion. Cover the bottom of the pan Chicken stock or water. I also drizzled a little olive oil.  Put in a 350 oven for 75-90 minutes.  Let cool down a bit and throw everything in a food processor.  Holy. Moly. Very restaurant like. Maybe a Cantina Laredo or Haciendas Ranch feel to it. So. Good.  I like it warm so when I go to get it out of the fridge, I just throw in the microwave for a sec.  SO good!

Chicken Lazone

Have I ever mentioned I love, love, LOVE “Michael cooks” nights. Seriously he is very good and doesn’t do it enough. I was down and out tonight with the tummy and had to take a bigger pill than normal. I had the tenderloins and searched tenderloin recipes. I helped him pull everything together and went back to my couch / heating pad position.  What you’ll need :  Costco Chicken Tenderloins Garlic Powder Salt/Pepper Flour, to dredge 2T butter 1T olive oil 1C Heavy Cream 1/2t Paprika 1/2t Onion Powder 1/4t Cayenne Pepper Dash of Italian Seasoning What you’ll do: - coat your chicken with garlic powder, salt and pepper. Dip each piece in flour.  - melt butter and add oil to a skillet. Brown each side 5 minutes until golden. Take out and set aside.  - stir in cream and scrape your pan grabbing all the chicken flavor. Add remaining spices and whisk into pan.  - add the chicken back into the pan 5-10 until chicken is cooked through and sauce has thickened.  You ca...

Da Da Bread

I've made this bread since I met Michael.  Tried and true Betty Crocker Banana Bread. I'm pretty sure I got this cookbook when Mom cleaned out her old house and I was starting my kitchens.  I've taken this to parties and friends for different reasons but I'll always love it because of Brody.  Brody used to ask me if I had "Da Da Bread".  He had walked into the kitchen one day and asked what I was doing, I must have said making Daddy some bread.  He ended up eating it, Brody's never eaten much, and still does and everyone still asks for me to make "Da Da" Bread.  Just a fun memory and great recipe to share. *I've done with and without nuts.  Love both.  Your preference.

self care.... day 1

I decided that everyday, I'm going to choose something to do for me.  Today was Bowl Games day at our house.  Now.... While I love me some football. All day of it and I'm good 😁.  This keeps me engaged in the room but also giving me my creative brain time.  #adultcoloringbooks #feedyoursoul

Goals for 2020

So after thinking through this for a while, I've decided to bring this back into my life.  I love to write, I love to express myself and share recipes.  SO...this blog may not always look pretty...it might get messy, because that's life, and I'm too old to pretend it's not.   Goals for 2020: To continue to search for what feeds my soul and not harms it. I'm going to keep up with my health goals and make it another year of weight maintenance.  Walking starts again.  Not about needing to lose, I like everything a bit tighter.  So there you go.  I'm not athletic, I do not LIKE working out.  But I do like walking because of the moment to take a breath and enjoy being outside and listening to good music 💓 I wanted to commit to living my truth...if I say be kind...that means I have to drop some guards and also do just that.  There's been a couple relationships over the years that I wanted to circle back to this year.  Both hav...

Oh this journey.....

I went to the dentist today for a normal cleaning and check up.  I'm not a fan....but I try my best every 6 months and hope my time in the chair is quick.  The kids and I have lumped together the past few times and my example is what I hope they see.  It may not be fun and you may not like it, but it's important! You just joining me...I decided at the age of 36 to undergo 2 years of braces and in the middle of that have double jaw maxiofacial (lots of dr. jargon) surgery.  Yes...broke both jaws.  Moved both jaws into place and wired for 3 weeks in a splint.   In the process of this surgery, he broke my bottom jaw in a random point on the right side .  So that was more plate and screws.  THAT break my friends is what I believe took complete feeling out of my face for the past 3 years. It was this The it was this But then I saw this And I had to do more of this But then I got this..... Those that have ...

Perpetual diets and a soul change....

I feel like all my life, I've been on a perpetual diet.  Seriously.  Pretty much every day of my life has been a choice.  Some days/months/years I do great.  Others....not so much. I've never been one of those girls.  You know...the ones that always just pulled it off.  Looks, weight, clothes.  Nope.  That is not me.  I've also always had skinny friends.  They ate the same things as me...but I'd notice on me and never on them.  I think I've always aspired in some way to be each of them.  Hell, maybe they keep me in check so I don't ever let myself go to much?  That's some deep thinking stuff! What a funny life.  Then, I had my jaw surgery.  Long recovery.  Long, hard, painful recovery.  I think I just gave myself a pass for the last couple of years.  Because I can tell you...I hadn't been too worried about my weight since then. So.  I had a picture taken of me on August 17th.  As ...
